So recent stackablectl versions "stackablectl demo install" will always use a release branch and main is allowed to be broken (as no end user is using it)?

According to @Techassi, yes. Main is unstable.

Yes. If --release is omitted, stackablectl will default to the latest stable release. Providing the argument obviously overrides the default. See stackabletech/stackable-cockpit#340
