Reverts "Dynamically calculate collection date range for docs" (022825b) with a few touchups. Basing the tutorial on recent data was well-intended but not reliable. For example, the previous query based on "within the last month" only yields two sequences, which is less than desirable.
Taking the chance to keep these up to date while running through the tutorials.
