Updating poetry dependencies

Notes on:

• Managing the deps on your local to update pyproject.toml and poetry.lock

For installing the dependencies, the following debian packages are also needed: libpq-dev -> pycopg2 unixodbc unixodbc-dev -> pyodbc

• Test them by rebuilding docker image
