The goal of this PR is to create more advanced testing scenarios for our TestHelper so we feel more confident merging improvements to it, eg.: #1164
OmniCounter tests have been ported with fixes from: https://github.com/LayerZero-Labs/LayerZero-v2/blob/main/packages/layerzero-v2/evm/oapp/test/OmniCounter.t.sol
Other patterns tests were ported from: https://github.com/St0rmBr3w/layerzero-design-patterns
