Extend documentation of copy-options to include formatting

Can the documentation, e.g., ReadMe, of --copy-options include what formatting is expected in the string? E.g., through a link to format options of the implementation operator or a comment what kind of standard formatting is expected.

A user wanted to do something like --copy-options "NULL '\N'" and it wasn't immediate obvious that it should be \\\N.
