[SDK Refactoring] Testing playground and demo apps.

Context / issue

Viem migration is changing many core parts of the protocol-kit. Once unit testing was adapted to work, we need to make sure that current apps work after the changes.

Proposed solution

Add an alpha version using Viem instead of ethers to the current testing apps.
Check that everything works as expected.
