- 1 medium chopped onion
- 1 pound ground beef
- 1 package taco seasoning mix
- 1 cup water
- 1 - 10 oz. can enchilada sauce
- 1 - 14.5 oz. can drained corn
- 1 - small can sliced black olives
- 3 cups shredded mild cheddar cheese
- 6 corn tortillas
Cook beef & onion until done., drain. Add taco seasoning and water. Cook 10 minutes and add corn and 2/3 of olives. Cut tortillas into 1/4 inch strips, dip into enchilada sauce, place 1/2 in a greased 10 inch casserole dish. Add 1/2 of meat sauce, then 1/2 of enchilada sauce and 1/2 of cheese. Layer with remaining second half of meat sauce then 1/2 half of enchilada sauce then second 1/2 of cheese sauce. Bake uncovered 350 degrees for 20 minutes. Garnish with remaining 1/3 of black olives.
