- 1 cup uncooked long grain rice
- 1/2 cup chopped onion
- 1/4 cup butter
- 2 1/4 cups chicken broth
- 1/2 cup chopped green bell pepper
- 1/2 cup diced celery
- 1 1/2 cups cooked bite size pieces chicken breasts
- 1 - 3 oz. can drained- sliced mushrooms
At medium heat brown in butter; onion and rice, stirring constantly. Add chicken broth, cover and cook for 10 min. Add green peppers and celery, cover and cook 10 to 15 min. until rice is tender, stirring occasionally. Add chicken and mushrooms. Pour into a 1 1/2 quart casserole dish. Bake at 350 degrees for 15 to 20 min.
