I've had this issue come up a couple times in the past couple months, where sometimes, originalDoc._id is undefined, but originalDoc.id is present, and vice versa.
I'm not sure why this is, and it usually coincides with an upgrade to Payload. Is there any insight the payload team can shed on this -- and which ID will be present moving forward?
