graphql(visitor): avoid DynamicField to-and-fro #19519

Use the annotated visitor pattern to avoid deserializing a whole DynamicField (include its name and value) to only fetch one part of it. indexer(visitor): avoid fully deserializing dynamic field #19520 #4773 and rest(visitor): avoid fully deserializing dynamic field (#19521) · MystenLabs/sui@d224a1a #4681 depends on this PR.
