Package.json should inherit extension name

Obviously the smallest of issues, but it'd be nice if package.json wasn't created with "bolt-cep" as the name parameter since you're never going to want to keep the name as that. Just a tiny QoL enhancement I wanted to note and can make a PR for later when I have time unless someone else beats me to it.
