As part of migrating Wine Mono to the new organization in Winehq Gitlab, I've cloned this repo at https://gitlab.winehq.org/wine-mono/monoDX

You should have maintainer access there.

Do you prefer to continue maintaining this repo as an upstream, or move to the winehq one?

I'm happy to move to winehq. I can just mirror it here like wine-staging.

Actually, how does mirroring work? Does it require keeping things manually updated? I was planning to archive my own Github repos being moved to Winehq, but if mirroring isn't constant effort then I might as well do that.

It's an automated thing.
There are a mirror options with gitlab which will push to another repository. The instructions are easy to follow, just note it can take a few minutes for the action to occur.
