The items get moved above the iron trapdoors through armor stands that will get sent via packets and won't exist for real. The packets are only sent to the players that are within the 100 block activation range. The armor stands carry the product in their hands and are invisible. The hand is positioned that the item just looks like something moving on the iron trapdoors. The conveyor belts are for aesthetic purposes only and thus, don't have to run 24/7. The processing components will even work together in unloaded chunks, as all the processing isn't world-based.
PS: I still have to figure out the packet to apply velocity to something.
